Yield: 1 Large Waffle or 2 Small Waffles (2 Servings)
Needed Kitchenware: Mixing bowl, microwave, waffle maker
  • 1 cup self-rising flour
  • 1 cup soy milk
  • 1 tbsp lemon juice
  • 2 tbsp maple syrup
  • pinch of salt
  • pieces of vegan white chocolate, chopped (I used Plamil)
  • ~6 raspberries, chopped
  • salted caramel chocolate spread (I used Plamil)

Directions

  • Preheat your waffle maker.
  • Mix the self-rising flour, soy milk, lemon juice, maple syrup, and salt in a mixing bowl with a whisk. Stir in the white chocolate pieces and chopped raspberries.
  • If using a large waffle maker, pour all the batter into the machine. If using a smaller waffle maker, pour half the batter at a time. Cook the waffles according to the machine's suggested time to cook.
  • Top with salted caramel chocolate spread that's been quickly microwaved, fresh fruit, and more white chocolate pieces. Enjoy!
Notes

If you do not have self-rising flour, use 1 cup of all-purpose flour instead and add 1½ teaspoons of baking powder.
