Yield: Bruschetta (2 Servings)
Needed Kitchenware: Mixing bowls
  • 2 large or 4 small slices of bread
  • 1 cup watermelon, cubed
  • 2 tbsp fresh basil, minced
  • 2 tsp balsamic vinegar
  • 1 tbsp extra virgin olive oil
  • sprinkle of everything seasoning
  • salt, to taste
  • ground black pepper, to taste
  • 1 tbsp vegan cream cheese
  • 1 tsp vegan pesto
  • leaves of fresh basil, to garnish
Recipe Directions


  • Toast your bread.
  • In a mixing bowl, combine watermelon, basil, balsamic vinegar, olive oil, salt, pepper, and everything seasoning. Set aside.
  • In another mixing bowl, combine the cream cheese and pesto together. Spread this mixture on your toasts.
  • Top with watermelon mixture.
  • Garnish with fresh basil and enjoy!
