Yield: Tteokbokki Gratin (1 Servings)
Needed Kitchenware: Cooking pot, baking dish, oven
  • 200 ml vegetable broth
  • ½ nori sushi sheet
  • 1 tbsp chili flakes
  • 100 ml gochujang paste
  • 200 g rice cakes
  • 2 green onions, chopped
  • 1 tbsp maple syrup
  • 50 g vegan mozzarella, shredded
  • sesame seeds to serve
Recipe Directions


  • Bring the vegetable broth to simmer in a pot. Add the nori and then reduce heat to low-medium. Let it cook for 10-15 minutes.
  • In the meantime, mix the gochujang paste with chili flakes.
  • Preheat your oven to 400°F or 200°C.
  • Remove the nori sheets from the broth, then add the gochujang chili paste mix to the pot and mix until fully dissolved. Add the rice cake, green onions (save some for later to serve), and maple syrup and simmer for 10-15 minutes until the sauce has thickened.
  • Transfer in an oven safe baking dish, then distribute the shredded mozzarella on top. Place into the oven and bake for 10-15 minutes until the cheese has melted.
  • Serve with the remaining green onion and sesame seeds.
