Easy vegan chocolate truffles using rich coconut cream and cocoa powder. Convenient enough to have as a regular dessert and decadent enough to give as a gift!

Yield: 12 Large Truffles or 24 Small Truffles (12 Servings)
Needed Kitchenware: Mixing bowl, sauce pan
  • 1 cup of coconut cream (1½ cans, see notes)
  • 1 tsp vanilla
  • pinch of salt
  • 450 g dark chocolate, broken into pieces
  • ½ cup cocoa powder

Directions

  • In a sauce pan on the lowest heat on the stove, add the coconut cream, salt, and vanilla.
  • Add the chocolate to the pan and stir until all melted. Turn off the stove, move the pan to a cool spot, and allow to cool for about 20 minutes.
  • After cooled, put into the refridgerator for 6 hours or overnight.
  • When ready to assemble, remove from the refridgerator and use a scoop to take some of the mixture out and roll into a ball using your hands. The size of the scoop will determine the size of your truffles. Use a tablespoon scoop for 12 truffles or a teaspoon scoop for 24 truffles. Once formed into a ball shape, roll into the cocoa powder and set aside. Repeat until all the truffles are done.
  • Store in the refridgerator for up to a week, enjoy!
Notes

Use "Unsweetened Coconut Cream" 5.4 ounce cans. If you cannot find these, you can make coconut cream from using cans of full fat coconut milk. To do this, get about 3 cans, gently shake each, and place into the refridgerator for 4 hours. Remove and after opening each can, you will notice the contents will have a solid portion and a liquid portion. You want to pour out the liquid portion into a jar to store for other use. The liquid is now low fat coconut milk. The solid portion is what you want to use for this recipe as it is high fat coconut milk, or coconut cream. You want enough coconut cream to make about 1 cup.
