Yield: 1 Tourtiere (8 Servings)
Needed Kitchenware: Food processor, grater, saute pan, aluminum foil or pie crust cover, pastry cutter, plastic wrap, 9-inch deep-dish pie baking dish
  • 325 g all-purpose flour
  • 170 g unsalted vegan butter, cold (I used Le Grand)
  • 72 g vegetable shortening
  • ¼ baking powder
  • 1 tsp salt
  • 8 tbsp ice water
  • 50 g dried wild mushrooms, hydrated
  • 19 oz (1 can) lentils, cooked
  • 3 tbsp salted butter (I used Le Grand)
  • 6 garlic cloves, minced
  • 1 onion, chopped
  • 2 carrots, chopped
  • 3 small potatoes, chopped
  • 1 medium beet, grated
  • ¼ cup vegetable stock
  • 1 cup TVP, hydrated
  • ¼ cup olive oil
  • ¼ cup tamari
  • ¼ cup water
  • ⅛ cup balsamic vinegar
  • 2 tbsp rosemary, fresh and chopped
  • salt and pepper, to taste

  • ⁣⁣Pulse hydrated mushrooms in a food processor.
  • ⁣⁣Cook the garlic, onions, carrots, and beet in the salted butter. Add ¼ cup veggie stock and cook until moisture has been absorbed and veggies are nearly done cooking.
  • ⁣⁣Add remaining filling ingredients, including the mushrooms, and stir to combine. Remove from heat and cool while you make the crust.
  • ⁣⁣Combine the crust ingredients with a pastry cutter (except water) until coarse crumbs forms. You can also use a fork if you do not have a pastry cutter, but do not use your hands, the mixture needs to keep cold. ⁣⁣⁣⁣Add th water and stir. Gather crumbly dough into a ball.⁣⁣
  • ⁣⁣Form the ball into 2 disks, wrap them each, and chill for at least 45 minutes.⁣⁣⁣
  • ⁣⁣Roll one disk into 13 inch circle. Dust with flour as needed. Transfer to 9-inch deep-dish pie pan.⁣⁣
  • ⁣⁣Use fingers to crimp the rim. Chill for at least 30 minutes. ⁣⁣
  • Preheat oven to 425°F or 220°C.
  • ⁣⁣Fill with filling and top with your other disk of dough. You can flatten it and use it cover the entire pie or you can cut out shapes like I did using dough cutters. Make sure you leave some slits or open areas in the top dough so that the steam can escape when cooked. ⁣⁣⁣⁣Chill for another 30 minutes.
  • Cover the edges of crust with foil. Bake for 15 minutes. Reduce to 375 degrees, remove foil, and bake for another 45-50 minutes.⁣⁣
  • ⁣⁣⁣⁣Allow to cool slightly before enjoying.

Substitute TVP for 1 cup of nuts, pulsed into coarse crumb using the food processor. You can substitute the tamari for soy sauce.
