Needed Kitchenware: Plastic wrap, blender, aluminum foil or parchment paper, steamer, cooking pan
Steaks
  • 500g red kidney beans, canned or cooked
  • 100ml soy sauce
  • 100ml water
  • 70g tomato paste
  • 4g nutritional yeast
  • 1 tbsp apple cider vinegar
  • 2 tsp garlic powder
  • 2 tsp oregano
  • 2 tsp smoked paprika
  • ½ tsp liquid smoke
  • 1 tsp coriander, ground
  • 1 tsp cumin, ground
  • 1 tsp mustard
  • 1 tsp black pepper, ground
  • 1 tsp chili flakes
  • 400g wheat gluten
  • 2-4 tbsp sesame or vegetable oil
Miso Butter
  • 120g vegan butter, at room temperature
  • 4 tsp white miso paste
  • 4 tsp sesame seeds
Togarashi Fries & Salad
  • 800g fries
  • 8 tsp shichimi togarashi (seven-flavor chili pepper)
  • nori sheets
  • Handful of spinach

Directions

  • Make the miso butter by mixing the vegan butter, miso paste, and sesame seeds together thoroughly. Transfer to a sheet of plastic wrap/clingfilm and roll into a log shape. Put in the freezer.
  • Make the seitan steaks by mixing the kidney beans, soy sauce, water, tomato paste, nutritional yeast, apple cider vinegar, garlic powder, oregano, smoked paprika, liquid smoke, coriander, cumin, mustard, black pepper, and chili flakes. Almost all the steak ingredients except for the wheat gluten. Mix in a blender until it forms one mass. Add the gluten and mix again until smooth.
  • Divide the seitan mixture into 4 equal parts, then form out steak-like shapes around 1 centimeter thick. Roll out aluminum foil or parchment paper sheets and wrap each steak inside one sheet.
  • Steam the steaks for 20-25 minutes.
  • In the meantime, prepare your fries according to the directions on their package or from fresh.
  • Cook the steaks in your cooking pan with the 2-4 tbsp sesame or vegetable oil over medium heat for 2-3 minutes on each side.
  • Season the fries with togarashi and crumble some nori over the top. Add the steak with slices of the prepared butter and serve with the salad.
Notes

If dividing the recipe to serve less than 4 servings, consider still making 4 steaks as they freeze very well. After steaming them in step 4, place any leftover steaks into the freezer.

The ingredients in this recipe do not convert well to measuring in cups, the use of a scale is highly recommended.

Vegan Steak Using Vital Wheat Gluten and Kidney Beans

A decadent dinner of heavy protein topped with butter and served with french fries. A classic dish served the world-over in restaurants but made entirely vegan! This recipe makes a wonderful twist on the classic dish by combining a mix of flavors from Japan, using miso, chili flakes, and nori. The result is a decadent umami experience, an entirely unique dish you have to try!

Is the Steak Seitan? What is Seitan Made Of?

Yes this steak recipe could be considered seitan. The word Seitan comes from Japanese origin, invented by George Ohsawa who advocated for the macrobiotic diet. The first syllable is from 生 (sei, "fresh, raw"), while the second syllable is from 蛋 (tan, from 蛋白 (tanpaku, "protein")). Seitan mixes wheat gluten with water and when cooked, forms a firm texture that separates very similarly to meat, jackfruit, or mushrooms. Because of its ability to contain any number of herbs and spices, as well be cooked in numerous ways, it's a very versatile meat-substitute that can be soft or firm, light to dark, or mimic any number of flavor combinations.

This steak recipe also uses a high amount of kidney beans along with the wheat gluten to include a different texture and nutritional profile.

What is Shichimi Togarashi?

Shichi-mi tōgarashi 七味唐辛子 is a seven-flavor chili pepper spice blend consisting of 7 ingredients. Though the blend might vary, it may contain: coarsely ground red chili pepper, ground sanshō (another pepper), roasted orange peel, black sesame seed, white sesame seed, ground ginger, hemp seed, nori or aonori, or poppy seed. The resulting flavor is a spicy sweetness.

Watch out for blends containing salt, as salt is not usually contained in this blend and is not considered authentic.

What Can I Use Instead of Shichimi Togarashi?

This is a difficult question as the spice blend has a unique mix of flavors that can't really be substituted in a few ingredients. Most substitutions do a decent job substituting for the spice and seeds but miss the sweetness or complexity you get from the other ingredients.

If you need to substitute, try using ½ tsp cayenne pepper, ¼ tsp sesame seeds (black or white), ⅛ tsp ground black pepper. If you have seaweed flakes, add ⅛ tsp of that as well.
