Needed Kitchenware: Open fire or grill, cooking pan, baking pan, mixing bowl.
Steak
  • 1 medium or large eggplant
  • 1 tsp cumin
  • 1 tsp mustard seeds
  • 1 tsp freshly cracked multicolored peppercorn
  • 1 tsp garlic powder
  • 1 tbsp onion powder
  • 1 tbsp smoked paprika
  • 1 tbsp mushroom powder
  • 1 tbsp dried rosemary
  • 1 tsp chili flakes
  • pinch of salt
  • 250 ml (1 cup) red wine
  • 1 tbsp olive oil
Red Wine Reduction Sauce
  • 150 ml (0.65 cup) red wine
  • 150 ml (0.65 cup) beet juice
  • 1 sprig of rosemary
  • ½ cube of vegetable stock
  • 50g (4 tbsp) vegan butter
  • 100 ml (0.43 cup) tamari sauce
  • 1 tbsp vegan Worcestershire sauce

Directions

  • Preheat the oven to 200°C (400°F).
  • Sear the eggplant over an open flame or grill until the skin starts separate from the eggplant, hold by the stem and with tongs to do this safely. Let it rest on a cutting board until it is safe to touch. Now peel the skin and cut off the stem. Lay the eggplant on the baking pan.
  • In a mixing bowl, mix the spices in the Steak ingredients section together and spread the mixture over the eggplant, patting the mixture into the eggplant with your hands. Now drizzle the olive oil on top and add the red wine on top. Bake for 70 minutes, turning it over carefully halfway through cooking.
  • In a sauce pan over medium heat, add the wine, beet juice, and rosemary from the Red Wine Reduction Sauce section. Allow it to reduce by letting it bubble once it simmers. When reduced by half, add the butter and vegetable stock and mix until well combined. Remove the sauce from the heat and mix in the tamari and Worcestershire sauce.
  • Once the eggplant has been baking for 70 minutes, remove from the oven and pour the sauce reduction over the eggplant. Reduce the heat for the oven to 180°C (350°F).
  • Bake the eggplant for an additional 40 minutes, basting the eggplant with the sauce a couple of times while baking.
  • Carefully remove the eggplant when done with a large flat spatula and serve immediately.
