Gluten-free quiche with an easy to make crust and a creamy spinach filling. Perfect for lunch or dinner, this quiche is sure to please!

Yield: 1 Quiche (4 Servings)
Needed Kitchenware: 22 cm or 9 inch circle baking mold, mixing bowl, parchment paper, rolling pin, sauté pan, blender, oven
  • 100 g almond flour
  • 65 g cassava flour
  • 20 g coconut flour
  • 1 tbsp ground flax seeds
  • 1 pinch salt
  • 5 tbsp extra virgin olive oil
  • 5 tbsp water
  • 1 tbsp extra virgin olive oil
  • 1 Figueres or white onion, thin sliced
  • pinch of salt
  • 50 g fresh chopped spinach
  • 75 g cashews, soaked at least 2 hours
  • 200 ml vegan cream or heavy cream
  • handful of fresh basil leaves
  • 1 tbsp nutritional yeast
  • 8-10 large cherry tomatoes, cut into halves
Recipe Directions


  • To make the crust, mix all the crust ingredients together well in a large mixing bowl and make a ball of dough. Spread it between two sheets of parchment paper and using a rolling pin, roll it until you have a fairly thin circle.
  • Place the circle in a round mold of about 22 cm or 9 inches, also covering the walls, prick the bottom with a fork and cook for 20 minutes in the oven at 355°F or 180°C. Remove from oven when done and set aside.
  • For the filling, in a sauté pan with 1 tablespoon olive oil, sauté the onion with a little salt over medium heat. When it starts to brown add the spinach. Stir two minutes, remove and set aside.
  • Crush the drained cashews and mix with the cream, basil, and yeast until you get a cream. Combine it with the sauté mixture.
  • Fill the crust of the quiche with this mixture and decorate with cherry tomato halves on top. Bake 15 more minutes.
