Needed Kitchenware: Cooking pan, blender
Green Goddess Dressing
  • 1 garlic clove
  • 1 avocado
  • ¼ cup (60 ml) unsweetened, plain soy yogurt
  • juice from 1 lemon
  • 1 tbsp cilantro
  • 1 tbsp basil
  • 1 tbsp agave syrup
  • 1 tsp cumin
  • salt, to taste
  • ground pepper, to taste
  • (optional) water
To Serve
  • 200 g vegan meatballs
  • 100 g hummus
  • 150 g cooked couscous
  • 100 g vegan feta cheese
  • 10 cherry tomatoes, sliced
  • handful of arugula
  • drizzle of olive oil
  • 1 lemon, sliced
  • drizzle of lemon juice

Directions

  • Fry the vegan meatballs in a cooking pan according to the directions on the package.
  • In the meantime, make the green goddess sauce by blending all ingredients. Optionally, add water if the consistency is too thick.
  • Serve the meatballs with couscous, hummus, goddess dressing, tomatoes, arugula, lemon slices, and drizzle on some olive oil and lemon juice.
