Needed Kitchenware: Large pot, colander, potato masher, saucepan, whisk, mixing bowl
Mashed Potatoes
  • 5 pounds red potatoes
  • 2 tbsp vegan butter
  • 2 cups almond milk
  • salt and ground pepper to taste
Gravy
  • 3 tbsp vegan butter
  • ¼ cup all-purpose flour
  • 1 cup almond milk
  • 2 cups vegetable stock
  • 2 tbsp soy sauce
  • ½ tsp salt
  • ½ tsp ground black pepper
  • ½ tsp garlic powder
  • ½ tsp onion powder

Directions

Mashed Potatoes
  • Put a large pot on the stove on high heat filled half way with water with a pinch of salt.
  • Cut all the potatoes into smaller chunks with the skin on.
  • When the water reaches a boil, carefully place the potatoes inside the water and allow to boil for 15-20 minutes. Check for doneness by using a fork to check how easy it is to pierce a potato.
  • Turn off the stove and strain out the water using a colander. Return the pot to the same burner on the stove.
  • Add the butter, milk, salt, and pepper and mash all the potatos together until your desired texture. Add more of any of these ingredients to your taste.
Gravy
  • Set a large saucepan on the stove at medium-high heat. Add the butter to the pan and using your whisk, keep the butter moving as it starts to melt.
  • Once the butter as melted, add flour 1 tbsp at a time into the pan. You want to whisk 1 tbsp of flour at a time into the pan and whisk constantly until all the flour is incorporated. Once incorporated, add the next 1 tbsp of flour and repeat until all the flour is incorporated. Watch the video below to see this in action.
  • Mix the almond milk, vegetable stock, and soy sauce in a large container. Pour small amounts of this liquid into the sauce pan and whisk constantly until incorporated. Do this until all the liquid is incorporated and smooth.
  • Keep whisking this liquid for another 10 minutes.
  • Add the spices, salt, and pepper at this time.
  • Keep whisking for another 5-10 minutes until the gravy has reduced and becomes thicker. Serve immediately, enjoy!
Notes

Package leftovers separately. Reheat mashed potatoes in a pot over the stove. Reheat gravy in a saucepan over the stove.
