Yield: 12 Lemon Donuts (12 Servings)
Needed Kitchenware: Mixing bowls, 2 donut baking trays, oven
  • 2 cups self-raising flour
  • 1 cup sugar
  • 2 tbsp lemon juice
  • ¾ cup non-dairy milk
  • ¼ cup olive oil
  • (optional) 1 tsp vanilla
  • 1 cup icing/confectioner's sugar
  • 2 tbsp lemon juice
  • (optional) shredded coconut
Recipe Directions


  • Preheat the oven to 175°C or 350°F. Prepare silicone 2 donut trays.⁣
  • In a bowl, mix the wet ingredients together.
  • In another large bowl, add the flour and sugar.
  • Pour the wet mix into the dry mix. Gently fold until no flour remains.
  • Divide the batter evenly amongst the 12 donut holes, filling it up ¾ of the way.
  • Bake in the oven for 15-17 mins until a knife inserted comes out clean⁣.
  • Remove the donuts from the oven and allow it to fully cool before icing⁣.
  • In a bowl, whisk the icing sugar and lemon juice until smooth and thick⁣.
  • Grabbing one donut at a time, dip half in the frosting to coat. Optionally, after icing, sprinkle coconut on top of each donut to decorate⁣.

If you do not have self-rising flour, you can make it if you have all-purpose flour on-hand. Use 2 cups all-purpose flour, 2 teaspoons baking powder, and ½ teaspoon salt.

If you don't have donut molds, you can definitely try making these into little muffins, cupcakes, or mini-loaves too
