Yield: 4 Baked Potatoes (4 Servings)
Needed Kitchenware: Sauce pan, parchment paper, baking sheet, kitchen brush
  • 4 large potatoes
  • 3 tbsp vegan butter
  • 1 tbsp rosemary
  • 1 tbsp thyme
  • 1 clove garlic
  • Salt to taste

  • Preheat the oven to 400°F.
  • Put the butter into a sauce pan on very low heat on the stove.
  • Dice the rosemary, thyme, and garlic. Add these to the butter and mix together as the butter melts. Let sit on very low heat while you work on the next 2 steps.
  • Wash and dry your potatoes. You can peel the potatoes or leave the skin on, it's your preference.
  • The potatoes should be able to lay flat and not roll over. If your potato rolls around, cut a little off the bottom horizontally so that it lays flat. No need to cut a lot off, just enough so that it doesn't roll around.
  • Cut slits into each potato as shown in the photo about 1cm apart. Be careful not to cut through the potato.
  • Place all your potatoes on a baking sheet lined with parchment paper. Be sure they are placed on their flattened side with the slits facing up. Turn the heat off on the stove for the sauce pan with the butter mixture. Spread ⅓ of the butter mixture on top of all the potatoes using a kitchen brush.
  • Place the potatoes in the preheated oven and cook for around 1 hour. While baking, baste the potatoes with the butter mixture 2 more times before they are done.
  • Cooking time depends on the size of potatoes. Test for doneness using a fork.
  • When done, change the oven from bake to broil on high and watch the potatoes. You will broil until the tops get a little crispy, might be anywhere between 1 minute and 5 minutes, so watch carefully before they burn.
  • Remove when done and serve immediately. (Optional) Garnish with fresh rosemary. Enjoy!

You can choose any type and size of potato you would like. Adjust bake time accordingly.

Why Are They Called Hasselback Potatoes?

Story goes, this recipe originates from a restaurant in Stockholm called Hasselbacken and are named after the restaurant. The traditional name for this side dish in Swedish is called Hasselbackspotatis.

Traditional Baked Potato with a Twist

What we love most about this recipe is that the cooking method allows for a crispy outside texture while leaving a soft interior of the potato. The slits in the potatoes also allow for the buttery mixture to collect and flavors the entire potato easily.

Different Hasselback Recipes

You could certainly make cheesy hasselback potatoes by adding a cheese or sauce on top when serving. You can also make these oil free by omitting the butter in favor of basting with a vegetable stock mixture. Skies the limit!
