Ingredients

Yield: 30 Fudge Squares (30 Servings)
Needed Kitchenware: Blender, sauce pan, bread-pan sized baking dish, parchment paper
  • 75g vegan chocolate
  • 350g coconut sugar
  • 80g cacao/cocoa powder
  • 110g coconut oil
  • 90 ml soy, oat, or coconut cream
  • 1 tsp vanilla
  • pinch of salt

  • Line your baking dish with parchment paper. Set aside.
  • If using coconut sugar, add to a blender and blend until you have a fine powder.
  • Add the coconut oil to a sauce pan on a low heat. When it melts add the chocolate and stir until it's melted.
  • Now add the cream, vanilla, and salt. Keep string until the sugar has melted.
  • Add the cacao powder and vigorously stir the thickening mixture until you have a thick chocolate liquid.
  • Pour into your prepared parchment-lined dish and leave to cool for 20-30 minutes.
  • After the mixture has cooled, put it into the fridgerator for two hours to set. Once set, cut into squares and enjoy!
Notes

You can substitute coconut sugar for confectioner's/icing sugar.

The fudge will get firmer over a few days so if you prefer it softer add another 10ml of cream.

Baking dish used was a bread pan. A smaller dish will yield taller pieces and a larger dish will yield more shallow pieces.
