Yield: Caesar Salad (2 Servings)
Needed Kitchenware: Mixing bowls, non-stick cooking pan
Tempeh Bacon
  • 200g tempeh, chopped
  • 2 tbsp soy sauce or tamari
  • 1 tbsp maple syrup
  • (optional) 1 tsp liquid smoke
Caesar Dressing
  • 3 tbsp vegan mayonnaise
  • 1½ tbsp lemon juice
  • 1 tsp garlic paste
  • 1 tbsp nori flakes, see notes
  • 2 tbsp nutritional yeast
  • 1 tbsp almond milk
  • Salt & pepper to taste
Other Ingredients
  • 4 cups cos or romaine lettuce, chopped
  • ½ cup croutons (I used Pimp My Salad)
  • Nutritional yeast or vegan permesan for sprinkling
  • (optional) vegan coconut bacon (I used Pimp My Salad)
Recipe Directions

Directions

  • Make the TEMPEH BACON: marinate the tempeh chunks in the soy sauce, maple syrup, and optional liquid smoke. Pan-fry in a non-stick pan on medium high heat for 3-4 minutes on each side until caramelized. Remove from the heat and set aside.⁣
  • Make the DRESSING: whisk together all the ingredients until thick and smooth. Use more almond milk to thin the sauce if you want it thinner.
  • ASSEMBLE the salad: Into a large bowl, add the lettuce, croutons, and tempeh. Drizzle the dressing over the top. Sprinkle with vegan Parmesan or nutritional yeast! Serve!
Notes

To make nori crumbs or flakes at home, use a small sheet of roasted nori sweaweed and crumble it.

Feel free to make your own croutons for this recipe!
