Needed Kitchenware: Mixing bowls, 8x8 baking dish, parchment paper
  • 2 tbsp ground flax seed
  • 3 tbsp water
  • 1¾ cup all-purpose flour
  • ¼ tsp baking soda
  • ¼ cup water
  • 6 tbsp cocoa powder
  • 4 oz (~120 g) semi-sweet chocolate, chopped into small pieces
  • ½ tsp salt
  • 1½ cup sugar
  • 6 tbsp vegan butter
  • 1 tsp vanilla
  • 100 g raspberries
  • 1 tbsp cocoa powder, for dusting (optional)

Directions

  • Preheat oven to 350° F.
  • Mix the ground flax and 3 tbsp water well in a bowl and set aside.
  • Line your baking dish with parchment paper.
  • In a separate mixing bowl, mix the flour and baking soda, set aside.
  • Heat the ¼ cup of water until boiling, set aside.
  • In a separate, large mixing bowl, mix the cocoa powder, chocolate, and salt. Add the heated water slowly into this bowl and mix together well, making sure that the chocolate is melted.
  • In the same bowl, add the sugar, butter, vanilla, and the flax mixture. Mix well until thoroughly combined and the sugar is dissolved.
  • In the same bowl, now add the flour mixture and mix until thoroughly combined. You can use a spatula to do this step and if it becomes too hard to mix, use your hands to complete the mixing but do not over-mix.
  • Evenly spread this batter into your lined baking dish. Top the batter with the raspberries and bake in the oven for 25 minutes.
  • Once done, allow it to cool out of the oven for at least 1 hour. Enjoy!
  • (Optional) Use 1 tbsp of cocoa powder to dust the top of the brownies when serving using a sifter, as shown in the photo.
Notes

You can make this recipe gluten-free by using all-purpose gluten-free flour. You might need to adjust the amount of flour by using more until the batter is too thick to mix with a spatula.

Do not use frozen or dried raspberries, fresh raspberries only.

Love brownies? This is your classic fudgy vegan brownie with a twist, adding raspberries on top for a splash of color and slight tart taste.

Can I make these gluten-free?

Yes! Read the notes under the directions for more information on this. In general, you can substitute the all-purpose wheat flour for favorite all-purpose gluten-free flour. When doing this, you might need to add more flour than what the recipe calls for and you'll have to judge the amount based on the texture. The density of the batter should be thick enough that it is difficult to mix with a spatula because it is too thick. That is the density you are looking for!

Can I mix raspberries into the batter for more berry flavor?

In this recipe, we are using the raspberry as an accent. We can use berries inside of brownies but we don't recommend doing it within this recipe because of their seeds and would need to use a different recipe. If we come up with that recipe, we'll update this and link it here!

Can I use another topping?

Sure! Anything you enjoy eating with fudgy vegan chocolate will go very well as a topping. Try accenting your serving with a mint leaf and dusted powdered sugar on top!
