Needed Kitchenware: Mixing bowls, food processor or blender, sifter, 3 9" spingform cake pans, wire rack, oven
  • ⁣⁣⁣500g all purpose flour⁣⁣⁣
  • ⁣⁣⁣400g sugar⁣⁣⁣
  • ⁣⁣⁣1 tsp salt⁣⁣⁣
  • ⁣⁣⁣2 tsp baking soda⁣⁣⁣
  • ⁣⁣⁣470g blueberries
  • ⁣⁣⁣240ml oil⁣⁣⁣
  • ⁣⁣⁣2 tbsp apple cider vinegar⁣⁣⁣
  • ⁣⁣⁣4 tsp vanilla⁣⁣⁣
  • 375g icing/confectioner's sugar
  • 227g vegan butter
  • 1 tsp vanilla
  • 1 tbsp plant-based milk
Recipe Directions


  • Preheat oven to 350°F or 180°C.
  • ⁣⁣⁣In a bowl, sift the dry ingredients together of the flour, sugar, salt, and baking soda. Set aside.⁣⁣⁣
  • ⁣⁣⁣Purée blueberries using food processor or blender.
  • ⁣⁣⁣Combine the wet ingredients of oil, apple cider vinegar, and vanilla with the blueberry purée.
  • ⁣⁣⁣Add wet ingredients to the bowl of dry ingredients. Stir until just combined.
  • ⁣⁣⁣Spoon batter evenly into 3 greased 9” springform cake pans. ⁣⁣
  • ⁣⁣⁣Bake for 17-20 minutes. Test with a toothpick to make sure cake has finished baking. Pierce the toothpick into the center and if it comes out clean, it's done.⁣⁣⁣
  • ⁣⁣⁣Allow the cakes to cool completely on a wire rack. ⁣Meanwhile, whisk all the buttercream frosting ingredients together until thoroughly mixed.⁣⁣
  • Alternate the cake tiers with the frosting until assembled. Top with frosting and evenly coat the sides with the frosting. Decorate with fresh blueberries, flowers, thyme, or anything else that you’d like!⁣⁣

You can also use a whipped coconut frosting: 2 cans cream from full fat coconut milk, 4 tbsp maple syrup, 1 tsp vanilla.
