Yield: 12 Banana Chocolate Chip Muffins (12 Servings)
Needed Kitchenware: Mixing bowls, 12-muffin baking pan, oven
  • 1 tsbp flax meal, ground + 2 tbsp water
  • ½ cup all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • ½ tsp pink Himalayan salt
  • 1 tsp cinnamon, ground
  • 3 bananas
  • ⅓ cup coconut oil, melted
  • ½ cup maple syrup
  • 1 tsp vanilla
  • 3 tbsp almond milk
  • 1 cup chocolate chips

Directions

  • Preheat oven to 350°F or 180°C.
  • Mix the 1 tablespoon ground flax meal with the 2 tablespoons of water in a small bowl. Set aside.
  • Mix all the dry ingredients in a bowl, set aside.
  • In a separate large bowl, mash the 3 bananas with a fork. Leave some chunks to add texture to the final product.
  • To this bowl, add the rest of the wet ingredients, and the flax mixture, and mix well.
  • Add dry ingredients to the wet ingredients. Using a spatula, fold it in until combined. Do not over mix the batter!
  • Fold in the chocolate chips.
  • Line your muffin pan with liners or lightly grease. Scoop the batter into your muffin pan evenly.
  • Bake for 20-25 minutes or until a toothpick inserted in the center of a muffin comes out clean.
