Kroketten and biterballen is a Dutch dish 🇳🇱 of fried rolls or balls of different fillings. This recipe uses an asparagus filling. Served hot as a snack, appetizer, or as a main course, usually served with mustard.

Yield: 8 Kroketten or 32 Bitterballen (6 Servings)
Needed Kitchenware: Cooking pot or steamer, blender, sauce pan, deep fryer
  • 350 g asparagus
  • 100 g vegan butter or margarine
  • 100 g all-purpose flour
  • small handful of fresh parsley
  • pinch of ground nutmeg
  • pinch of salt
  • (optional) 80 g vegan ham, cut into tiny pieces
  • 1 tsp agar agar
  • more flour for coating
  • 200 ml vegan milk
  • 200 g breadcrumbs

  • Peel and cut off the ends of the asparagus. Cut the rest of the asparagus into small pieces. Cook the peels, ends, and asparagus pieces for about 10 minutes in enough water to cover or steam with. You can use a basket to make it easier to separate the peels from the pieces when it's cooked.
  • Save the asparagus cooking water. Discard the asparagus peels. Add the asparagus pieces to a blender and blend.
  • Make a roux by melting the butter or margarine and add the 100 g of flour. Keep stirring with a whisk until it becomes a sandy texture. Add the cooking water bit by bit until it becomes a thick sauce.
  • Add the fresh parsley, nutmeg, salt, the asparagus mixture, and (optionally) the vegan ham pieces. Bring the sauce to a boil and add the agar agar. Keep stirring for about 2 minutes. Remove from the heat and let this sit in the refridgerator for at least 3 hours for it to become cold and stiffen.
  • Take the mixture out of the fridge when ready. Preheat your fryer. Start making the shaping you want. For a kroket, make large roll shapes. For bitterbal, make balls.
  • Put the coating flour, milk, and breadcrumbs in different bowls. Coat all sides of your kroket/bitterbal. First you put the mixture into the flour, then milk, then flour again, then milk again, and end with a coating of breadcrumbs.
  • Fry the kroketten or bitterballen until golden crispy. Place on paper towels to dry.
  • Serve immediately and enjoy with some fries or on a sandwich with some mustard!
