Yield: 1 Soup and Sandwich (1 Servings)
Needed Kitchenware: Non-stick pan with lid, blender, sauté pan
Grilled Cheese Sandwich
  • 2 slices of bread
  • slice of cheddar cheese (used VioLife)
  • mozzarella cheese shreds (used VioLife)
  • 1 thin slice of red onion
  • 2 tbsp vegan butter or olive oil
  • sprinkle of dried rosemary
Pumpkin Tomtato Soup
  • 2-3 tomatoes
  • 1 red bell pepper, sliced
  • 1 garlic clove, minced
  • ½ 1 small onion of your choice, diced
  • ½ can (about 7 ounces) of pumpkin pureé
  • salt and pepper to taste
  • 1-8 tbsp plant-based milk
  • (optional) 1 tbsp pumpkin seeds for topping
Recipe Directions


  • Prepare all your vegetables before starting to cook.
  • Heat your non-stick page to low heat. Butter or oil each side of the sliced bread and place into pan. Put the cheeses, onion, and rosemary on both pieces of bread. Cover with lid and cook until the underside of the bread starts to brown and cheese is melted thoroughly. About 5-10 minutes depending on the heat of your pan.
  • Meanwhile, in your sauté pan, heat the pan to medium-low and add the tomatoes, onion, garlic, and bell pepper. Cook until the onion becomes translucent, about 5 minutes.
  • Add the cooked ingredients for your soup to a blender along with the salt, black pepper, and pumpkin pureé. Use enough plant-based milk of your choice to add to the soup until desired consistency is achieved.
  • Serve the soup by adding some pumpkin seeds on top and serve next to your grilled cheese sandwich. Enjoy!

Adjust the heat of your pan to make sure your grilled cheese is done at the same time your soup is. Practice makes perfect!

Use gluten-free bread to make this recipe gluten-free.
