Yield: 40 oz (8 Servings)
Needed Kitchenware: Juicer, large cooking pot
  • 6 large white sweet potatoes
  • 2 cups water
  • 3 tbsp maple syrup, or to taste

Directions

  • Peel the potatoes and chop length-wise for juicing.
  • Juice all the potatoes. The starch will collect at the bottom of the juicing container. Mix well, don't leave the starch out as it helps thicken the milk.
  • Transfer the juice to a large pot and add the water and maple syrup.
  • Heat for 15 minutes on medium heat. Watch carefully as the milk will rise and spill over if it starts to boil. Store up to 5-7 days in refrigerator after the liquid has cooled down completely on the counter. Shake well before use.
Notes

Substitutions: You can substitute white sweet potatoes with orange sweet potatoes but it will taste less sweet. Using purple sweet potatoes is not recommended.

Storage: Lasts 5-7 days in the refrigerator. Shake well before use.
