Yield: ~2 Cups Sweet Ginger Chili Sauce (30 Servings)
Needed Kitchenware: Blender, saucepan, storage jars
  • ½ cup rice wine vinegar
  • 1½ cup granulated sugar
  • 130 g roasted red peppers from a jar drained, about 3 large
  • ½ cup roasted red papper jar liquid or water
  • 1½ tbsp sambal oelek chili
  • 2 tbsp cornstarch or arrowroot powder
  • 15 g fresh ginger
  • 1 tbsp garlic powder
  • ½ tsp sweet paprika
  • pinch of salt
Recipe Directions

Directions

  • Add all the ingredients to a blender and blend until smooth.
  • Transfer the mixture to a saucepan over medium-low heat. Use a whisk to stir the mixture until it thickens.
  • Remove from heat, allow to cool, and then jar. Makes about 2 cups worth. Store in the refrigerator for up to 3-5 days or the freezer for long-term storage. The sauce will thicken a little more while cooling in the refrigerator.
  • Serve hot or cold as a condiment, dip, or sauce, enjoy!
Notes

If you use arrowroot instead of cornstarch, make sure to take the sauce quickly off the heat once it thickens. If you continue cooking after it thickens, it will break the starch structure and turn watery.
