Yield: Stuffed Sweet Potatoes (1 Serving)
Needed Kitchenware: Mixing bowl, baking sheet, blender, oven
  • 130 g canned chickpeas, rinsed and drained
  • 1 sweet potato
  • 2 tbsp oil
  • ½ tsp rosemary
  • ½ tsp thyme
  • salt, to taste
  • ground black pepper, to taste
Sauce
  • 50 ml almond milk
  • 30 g cashews, raw unsalted
  • 1 tsp turmeric
  • ½ tsp salt, or to taste
  • ½ tsp ground black pepper
  • 1 garlic clove
  • 25 g soy yogurt
  • (optional) 1 tbsp nutritional yeast
Topping
  • 50 g quinoa, cooked
  • 4 lettuce leaves
  • ½ tsp chili flakes
Recipe Directions

Directions

  • Preheat oven to 300°F or 150°C.
  • Cut the sweet potatoes in half lengthwise. Score the back and place on a baking sheet together with the chickpeas.
  • Drizzle with oil, season with the rosemary, thyme, salt, and pepper, and put into the oven for 40 minutes.
  • Blend all the sauce ingredients in a blender until smooth and creamy.
  • When done, top the sweet potatoes with lettuce, quinoa, baked chickpeas, and the sauce.
  • Garnish with chili flakes and enjoy!
