Yield: 4 Strawberry No Bake Cheesecakes (4 Servings)
Needed Kitchenware: Sauce pan, 4 single-serve containers, refrigerator
Crust
  • 150 g vegan biscuit cookies
  • 4 tbsp creamy peanut butter
Filling
  • 16 strawberries
  • 800 g soy yogurt, vanilla sweetened
  • 60 g protein powder, cinnamon or vanilla flavor
  • 45 g cornstarch
  • 250 ml almond milk
Toppings
  • 4 strawberries
  • left over biscuit crumbs
  • chocolate syrup
  • creamy peanut butter
Recipe Directions

Directions

  • Prepare the strawberries in the filling and cut them in half.
  • Crush the biscuits into crumbs and mix with the peanut butter to form a dough. Press this into each of the 4 containers evenly.
  • Mix the almond milk, cornstarch, protein powder, and yogurt in a sauce pan. Turn on the heat and heat until it thickens. Take it off the heat and set aside.
  • Place the strawberries in each container around the edge as shown in the video. Pour the filling into the center of each container evenly. Refrigerate for 30 minutes.
  • When serving, top each with biscuit crumbs, creamy peanut butter, chocolate, and a strawberry. Enjoy!
