Strawberry-Vanilla Portuguese Doughnuts (Malasadas)

Portuguese doughnuts, Hawaiian style! These are leavened doughnuts that are fried, filled with a custard filling, and then rolled in sugar. Absolutely delicious, these feature a strawberry and vanilla filling.

Needed Kitchenware: Large frying pot, blender, decorator's piping bag, lagre mixing bowl, parchment paper, frying thermometer, wire rack, saucepan
Custard Filling
  • 500 ml (little over 2 cups) soy milk
  • 2 tsp vanilla
  • 100 g (½ cup) granulated sugar
  • 4 tbsp corn starch
  • 3 tbsp vegan butter
  • 5 tbsp strawberry jam
Doughnuts
  • 500 g (4 cups) all-purpose flour
  • 300 ml (1⅓ cup) warm soy milk
  • 1 tsp salt
  • 2 tsp dry yeast
  • 50 g (¼ cup) granulated sugar
  • 3 tbsp room temperature vegan butter
  • For topping, ¾ cup granulated sugar
  • Frying oil

  • In a blender, add the soy milk, vanilla, sugar, and corn stach in the custard ingredients. Blend until smooth and pour into saucepan over low heat.
  • Stir mixture constantly with a whisk to keep it smooth while it heats. Turn off the heat once the mixture is thickened. Add the butter and whisk into the mixture until it is thoroughly combined.
  • Move the mixture to a bowl and allow to cool for 30 minutes on the counter.
  • Put all the doughnut ingredients into a large mixing bowl, mix together, and knead for about 10 minutes until the dough ball becomes smooth.
  • Smooth the ball and cover the dough ball with a damp cloth and allow it for rest for 1-2 hours in a warm place to allow it to rise.
  • Once the custard mixture has cooled, whisk the strawberry jam in until combined. Transfer the mixture into a piping bag and place into the refridgerator until needed.
  • Cut parchment paper into 8 5-inch square pieces. Once your dough ball has risen, take the dough ball onto a floured surface and cut into 8 pieces. Round each into a ball shape and place onto each parchment paper square. Place them next to each other, place the damp cloth on them, and allow to rise for 30 minutes.
  • Place frying oil into your large pot or frying machine. You will want enough oil to fry 1-3 doughnuts at a time with enough room for them to float as well as enough height in the container to be double than the level of oil. For example, if your oil is 6 inches deep, you will want at least a 12 inch tall pot. Heat the oil to around 180°C or 375°F.
  • While the oil is heating, have your wire rack ready nearby to put the doughnuts on to cool. It will be messy, consider placing something underneath the rack. Prepare a bowl with the ¾ cup of sugar to have ready.
  • Once the oil is heated to temperature, place 1-3 doughnuts directly into the hot oil with the parchment paper still attached. Once the paper comes off from the dough, quickly, and safely remove from the pot. Fry each doughnut for 1-2 minutes until golden brown while maintaining the temperature, do not let it climb too high or go too low.
  • Once you remove a doughnut, place it into the sugar bowl and rotate the doughnut in the sugar to fullo cover it. Then place it on the wire rack to cool.
  • Once your doughnuts are done and have cooled down, make a small hole in them using a chopstick or something very similar to it. Grab your custard bag and gently mix the custard by squeezing it gently with your fingers without letting it come out of the top. Now squeeze custard into each doughnut to fill them and they're ready!
Notes

You can substitute the soy milk for any high-fat milk like macadamia or cashew.

Frying the doughnuts might take some practice. If the oil is too hot you will burn the outside but not cook the inside. If too low, the doughnut will soak up too much oil making it soggy. Monitor carefully.

You can try to make a perfect doughnut shape but any shape will do!
