This is my absolute favorite bread recipe. The bread doesn't have to proof, it only consists of a few simple ingredients and the carrots make the bread particularly juicy! The longer the dough is kneaded, the fluffier it becomes.

Yield: Loaf of Spelt Whole Grain Bread (12 Servings)
Needed Kitchenware: Mixing bowl, stand mixer, grater, bread pan, oven
  • 500 g wholemeal spelt flour
  • 400 ml water
  • ¼ oz yeast
  • 1 tbsp salt
  • 100 g walnuts, whole or chopped
  • 50 g oats
  • 2 carrots, shredded
  • 10 walnuts
  • 1 tbsp oats
Recipe Directions


  • Dissolve the yeast in the water. Preheat oven to 350°F or 180°C.
  • Mix all the ingredients for the dough thoroughly. Knead for at least 10 minutes using a wooden spoon or 5 minutes using a stand mixer. The longer the dough is kneaded, the fluffer it becomes.
  • Place the dough into a bread pan and top with toppings
  • Bake for 50-60 minutes in the oven.
  • Allow to cool thoroughly before eating.
