10 MINUTES is all you need to make this easy and tasty noodle bowl. The flavours of the sauce soak in so it would make it a very good meal prep dish too. Feel free to also add on chilli oil according to how much spice you can handle ☺️

Yield: 1 Soba Noodle Bowl (1 Servings)
Needed Kitchenware: Cooking pot, whisk, bowl
Main
  • 75g soba noodles
  • 1 bok choy
  • 1 cup broccoli florets
Sauce
  • 2 tbsp kecap manis
  • 2 tbsp soy sauce
  • 1 tbsp brown sugar
  • 3 tbsp water
  • 2 tbsp sesame oil
  • (optional) chili oil, to taste
Garnish
  • 100g smoked tofu, chopped
  • 2 spring onion stalks, green part only, chopped
  • ½ avocado, sliced
  • 1 tbsp sesame seeds

Directions

  • Bring a large pot of water to a boil. Add the noodles and vegetables to the water and cook the noodles according to the package instructions. This is usually around 3 minutes.
  • While the noodles are cooking, make the sauce by whisking together all the sauce ingredients in a mixing bowl.
  • Once the noodles are done, drain the entire pot with the vegetables and transfer to your serving bowl.
  • Pour the sauce over the noodles and mix well.
  • Top with the tofu, spring onion, avocado, and sesame seeds. Serve and enjoy!
Notes

Kecap manis is a sweetened soy sauce originating in Indonesia. Kecap manis is made of soy sauce with palm sugar, garlic, star anise, and galangal. It is quite sweet, from the palm sugar, and thick like molasses. Nothing will substitue as well as having it on-hand or making it yourself from scratch if needed. Since we are not cooking the sauce in this recipe, if you are going to substitute, it's important that the substitute be liquid and ready-to-use. You can try using hoisin sauce or by using 1 tbsp soy sauce and 1 tbsp molasses.

If you need the tofu heated through, add the tofu in the cooking pot with the noodles and vegetables at the last minute before draining.
