Yield: Soup (6 Servings)
Needed Kitchenware: Soup pot with lid and either a blender or hand blender
  • 2 tbsp oil
  • 1 scotch bonnet or yellow chili, chopped
  • 1 medium white onion, chopped
  • 1 large yellow bell pepper, chopped
  • 1¾ cup corn kernels (300g), room temperature
  • 1 tbsp white vinegar
  • 1½ cup water
  • Salt to taste
  • Chives to garnish, sliced small

Directions

  • Add the oil and yellow chili into a cooking pot over medium heat. Mix while it cooks for a couple minutes until you hear sizzling.
  • Add the onion, bell pepper, salt, and corn into the pot. Continue to mix until the onions become less white.
  • Add ½ cup water to pot and mix. Cover and cook for 7 minutes.
  • Remove the lid. Add vinegar and mix.
  • Blend the ingredients in a blender or use a hand blender to blend inside the pot. Blend until smooth. Put the blended mixture back into the pot.
  • Add 1 cup of water to the pot and mix. Taste test here to adjust salt if more needed.
  • Serve soup immediately and garnish with chives or herbs. Enjoy!
Notes

Adjust the spice level to your preference after you make the recipe your first time.
