Yield: 1 Large Bread (12 Servings)
Needed Kitchenware: Mixing bowls, 1 loaf pan, oven, blender, stand mixer
Filling
  • 50 g thyme
  • 50 g basil
  • 1 garlic clove
  • 1 tsp salt
  • 80 g vegan butter, melted
Bread Dough
  • 150 ml warm water
  • 150 ml warm almond milk
  • 3⅔ tsp sugar
  • 7 g active dry yeast (1 packet)
  • 500 g bread flour
  • ½ tbsp nutritional yeast
  • 1¾ tsp salt
  • 1½ tbsp olive oil plus additional for oiling the pan
Brushing
  • 10 ml almond milk
  • 10 g vegan butter, melted

  • Make the filling by blending all ingredients in a blender. Store this filling in the refridgerator until later.
  • From the bread dough ingredients, pour the warm water and almond milk in a large mixing bowl, then add the sugar and active dry yeast. Lightly stir these together and let it rest for 5-10 minutes. The yeast should bloom and activate in the water.
  • Add the flour, nutritional yeast, salt, and oil to the mixing bowl and knead using a stand mixer for 8-10 minutes. If you do not have a stand mixer, you can knead by hand for about 15 minutes.
  • Shape the dough into a ball and let it rest in a warm place for 60-120 minutes. You can expect the dough to rise to about double the size.
  • Roll out the dough into a rectangle shape double the length of your loaf pan and about 5mm thick. Spread the filling evenly to cover the dough.
  • Roll up the dough. Cut the roll in half so you have 2 equal rolls the length of your loaf pan. Make sure they are laying on the seam. Now, using a sharp knife, cut a line horizontally along each roll to expose some of the layers. Do not cut all the way through, just through a layer or two.
  • Twist one roll of the bread around the other one so you have a twisted knot.
  • Oil your loaf pan and carefully transfer the twisted bread into the loaf pan. Let it rest for 30 minutes.
  • Preheat oven to 180°C or 350°F.
  • Brush the bread with the almond milk and put in the oven for about 35 minutes.
  • Remove it from the oven and brush with melted vegan butter.
Notes

If you don't have bread flour, you can substitute with all-purpose flour, but note that the bread will not rise as much and have a slightly less-dense texture.

The warm water for the yeast should be very warm but not burn to the touch of your finger. If the yeast does not bloom, the water might not have been the right temperature or the yeast itself is too old.
