Easy, 4-ingredient recipe using one of my FAVOURITE plantbased icecreams: the Salted caramel choc chip one by So Delicious. If you guys haven’t tried this ice cream, I would definitely recommend giving it a go, it will blow your mind 💥 ⁣This recipe is no-bake, gluten-free, and super easy to make!

Yield: Salted Caramel Chocolate Chip Raspberry Ice Cream Cups (6 Servings)
Needed Kitchenware: Muffin pan, muffin liners, food processor, freezer
  • 1 cup cashews
  • 1 cup dates, pitted
  • 1 tub Salted Caramel Cluster Ice Cream (I used So Delicious)
  • ½ cup frozen raspberries
Recipe Directions


  • Before starting, soak the pitted dates in water for about 1 hour.
  • Line some muffin holes with non-stick paper or use a silicone muffin try like I did.⁣
  • Remove the ice cream from the freezer to allow it to melt at room temperature.⁣
  • Make the base layer: In a food processor, blend the cashews until it resembles a flour. Add in the dates and a dash of the water that the dates were soaked in. Blitz until the mixture clumps together in a ball.⁣
  • Divide the base into 6 even portions and spread it an evenly in each muffin hole to form the base.
  • Make the filling: Spread the raspberries evenly into the 6 cups. Now spoon the melted ice cream into each muffin hole. If the ice cream is not soft enough yet, you can microwave it for a few seconds.⁣
  • Freeze for at least 3 hours until the ice cream is solid again before removing from the mold and serving. Store these cups in the freezer, enjoy!⁣

Store cups in the freezer.
