Recipe Ingredients


Yield: Roasted Beet and Walnut Dip (8 Servings)
Needed Kitchenware: Oven, blender
  • 3 medium beets, prepared and roasted
  • 2 carrots, prepared and roasted
  • ⅓ cup walnuts
  • 1 garlic clove, minced
  • 4 tsp red wine vinegar
  • 1 tsp maple syrup
  • ¼ cup olive oil
  • ½ sea salt
  • (optional) ½ tsp ground za'atar
  • ¼ tsp ground black pepper
  • 2 tbsp tahini
  • ½ cup vegan Greek yogurt
  • basil to garnish
  • extra walnuts, crushed, to garnish
Recipe Directions


  • Blend all the ingredients except for the Greek yogurt and basil. Blend until very smooth.
  • Stir in the Greek yogurt until thoroughly mixed. Garnish with basil and extra walnuts.

Roast your vegetables in advance for easy prep.

Served with pita chips as shown in photograph.
