Yield: 1 Tiramisu Single-Serve (1 Servings)
Needed Kitchenware: Mixing bowl, sifter or fine-mesh strainer, 3-inch round serving dish
  • 1 cup soy yogurt
  • 1 scoop or 40 g vegan vanilla protein powder (I used Macro Mike)
  • 2 rice cakes
  • 1 cup chilled coffee
  • 1 tbsp cocoa powder
  • (optional) liquid sweetener

Directions

  • In a mixing bowl, mix the yogurt and protein powder until no dry mix remains. Optionally, add in a liquid sweetener, like maple syrup, to this mix if you wish to increase the sweetness. Scoop ⅓ of this mixture into the base of your round serving dish.
  • Dip 1 rice cake into the chilled coffee and layer on top of the yogurt mix in the dish.
  • Add another ⅓ layer of yogurt and top with another soaked rice cake.
  • Top with the remaining yogurt mixture. Using a sifter or fine-mesh strainer, add the cocoa powder into it and lightly tap on the side to dust the top of the tiramisu with cocoa powder.
  • Enjoy immediately or place in the refrigerator overnight for a breakfast ready the next morning.
