Yield: 4-6 Truffles (5 Servings)
Needed Kitchenware: Mixing bowls
Filling
  • 1 cup almond meal
  • 1 scoop vegan peanut protein powder (I used macromike)
  • ⅓ cup peanut butter
  • ⅓ cup maple syrup
  • 3 rice cakes
Coating
  • 80g vegan chocolate
Recipe Directions

Directions

  • Make the truffle filling: Add in all the ingredients except the rice cakes into a bowl, and mix until a cookie dough consistency.
  • Crumble the rice cakes into the cookie dough. Mix to combine.
  • Divide and roll the dough into 4-6 even balls. Freeze for at least 60 minutes until the balls are solid.
  • Melt the chocolate and roll each ball in the chocolate until fully coated.
Notes

Storage tips: in an airtight container in the fridge for up to 5 days or in the freezer for months, allowing it to thaw at room temp for a 5 minutes before serving.
