This sweet, gooey, chocolatey confection is my favorite dessert recipe yet! It’s low-fat, completely raw and vegan and won't break the bank on your health goals this holiday season. It's so good even your non-vegan friends and family will love this amazing dessert.

Yield: 1 Pecan Pie (8 Servings)
Needed Kitchenware: Blender, springform 9 inch pan
Crust
  • 15 pitted Medjool dates
  • ¾ cup mission figs
  • ¾ cup dried mulberries
  • ¾ cup pecans
Chocolate Cherry Filling
  • 40 pitted Medjool dates
  • 3 cups frozen dark sweet cherries, thawed
  • 4 tbsp raw carob powder
Pecan Topping
  • ¾ cup whole pecans
Cherry Caramel Topping
  • 1 cup frozen dark sweet cherries, thawed
  • 5 pitted dates
  • 1 cup coconut water
  • ¼ tsp cinnamon

Directions

  • Prepare your springform pan. In the blender, add the ingredients in the crust list: dates, figs, mulberries, and pecans. Remove from blender and press evenly into the bottom layer of your pan as evenly as you can with your fingers.
  • In the blender, add all the ingredients in the filling list: dates, thawed cherries, and carob powder. Pour over the crust in the pan evenly.
  • Now carefully place all the whole pecans in the pecan topping section on the top of the pie as shown in the video and photos below. Press each pecan into the pie a little so that they adhere. Place into the freeze for 24 hours.
  • Release the springform after you take the pie out of the freezer while it is still frozen. Allow to thaw 15-30 minutes before serving.
  • To make the caramel cherry topping, blend together the dates, water, and cinnamon. Then mix in the thawed cherries. Top on the pie when serving. Enjoy!
