This chickpea meatloaf recipe is quick, easy to make, and just happens to be plantbased. A total crowd pleaser, this recipe uses simple ingredients you probably already have in your kitchen or can easily substitute.

Needed Kitchenware: Food processor, parchment paper, baking dish or loaf pan
Loaf
  • 1 cup chickpeas from can/box, drained
  • ½ medium onion
  • 1 carrot
  • 2 large tomatoes
  • 4 garlic cloves
  • 2 tbsp oat milk
  • 2 tbsp soy sauce
  • 1 cup breadcrumbs
  • 2 tbsp flax seeds
  • 1 tsp ground black pepper
  • 1 tsp salt
  • 1 tbsp olive oil
Sauce Topping
  • 2 large tomatoes
  • 2 tbsp apple cider vinegar
  • 1 tbsp chili pepper
  • 1 tsp maple syrup
  • ½ handful of chopped parsley, cilantro, or thyme
Recipe Directions

Directions

  • Preheat oven to 450 degrees.
  • Chop the ingredients for the loaf smaller and add them to a food processor. Pulse until thoroughly combined but small clumps are okay. It should be thick, add more breadcrumbs if it falls off a spoon if held upside down.
  • Put enough parchment paper to cover your baking dish or loaf pan, and place the mixture evenly inside of the paper. Place into the preheated oven for 30 minutes.
  • In the food processor, add the 2 tomatoes, apple cider vinegar, chili pepper powder, and maple syrup. Blend until smooth.
  • Once the time has passed for the loaf, carefully remove from oven and place the sauce topping on the loaf evenly. Place back into the oven for an additional 25 minutes.
  • Remove from oven when done and top with your chosen ½ handful of chopped herbs and allow to cool for 10 minutes before removing and slicing. Enjoy!
Notes

If you choose to use dried chickpeas, soak the chickpeas in water over night.

You can certainly substitute the chickpeas for a different bean or lentil.

You can use a gluten-free breadcrumb substitute, the breadcrumbs create texture but the gluten is not necessary.
