Overnight Oats
  • ¾ cup oats
  • 1 tbsp chia seeds
  • ½ tsp pumpkin spice
  • ½ cup pumpkin purée
  • ½ banana, mashed
  • 1¼ cup almond milk
  • 1-2 tbsp gingerbread pecan nut butter
  • ¼ starfruit, sliced
  • ¼ persimmon, cubed
  • ¼ apple, diced
  • ¼ cup walnuts or pecans, chopped
  • 1 tbsp pumpkin seeds
  • 1 tbsp dried papaya, cubed
Recipe Directions


  • Combine the overnight oats ingredients in a bowl and stir thoroughly to combine.
  • Cover and refrigerate for a minimum of 1 hour or overnight.
  • Once the oats are ready, prepare your toppings and arrange on top of the oats.
