Yield: 1 Peanut Butter & Jelly Oat Bake (1 Servings)
Needed Kitchenware: Blender, parchment paper, small baking dish, oven
  • 2 bananas
  • 1 cup oats
  • 1 tsp baking powder
  • 1 tsp apple cider vinegar
  • (optional) 1 scoop vanilla protein powder
  • 8 strawberries, sliced
  • ~2 tbsp peanut butter

Directions

  • Preheat oven to 180°C or 250°F.
  • In your blender, blend the bananas and oats til smooth.
  • Add the baking soda, apple cider vinegar, and protein powder to the blender and blend well.
  • Use parchment paper to line your small baking dish. Transfer the mixture to the baking dish.
  • Cover the mixture with the sliced strawberries and drizzle 1 tbsp of peanut butter.
  • Bake for 15 minutes.
  • Serve by adding the other 1 tbsp of peanut butter drizzled on top.
Notes

Instead of the protein powder, you can also add 1 tablespoon chia seeds.

You can also serve with some cooling soy yogurt.
