Yield: 6 Peach Tarts (6 Servings)
Needed Kitchenware: Mixing bowls, sauce pan, oven, baking sheet, parchment paper, kitchen brush
  • 1 vegan puff pastry sheet, thawed per the directions on the package
  • 2 peaches, thinly sliced
  • 150g vegan brie cheese (I used "Der Genussige Klassik" by Veganz)
  • 100ml (little less than ½ cup) soy milk
  • 1 tsp apple cider vinegar
  • 1 tbsp peach jam
  • salt and ground black pepper to taste
  • sprigs of fresh thyme
  • agave or maple syrup to serve

  • Preheat oven to 200°C or 400°F.
  • Roll out your sheet of thawed puff pastry and cut it into 6 equally-sized rectangles. Fold up the edges onto itself by about 1-3 cm to create a border. You can use a fork to decorate the edge or leave it more natural as shown in the photos. Place these on a baking sheet lined with parchment paper.
  • Heat half of the soy milk and all of the brie cheese in a sauce pan over low heat. Turn off heat and remove the pan off the burner once the cheese has dissolved and is mixed with the milk.
  • In a separate bowl, mix the rest of the soy milk with the apple cider vinegar. Set aside.
  • From a couple sprigs of thyme, get the leaves off and add these leaves to the brie mixture. Add a pinch of salt and pepper or to taste. Set aside.
  • Using the milk and apple cider vinegar mixture, brush this on the edges of your puff pastries. You will have some liquid left, set aside.
  • Spread the brie mixture equally among the pastry rectangles in the middle of them. Now add your sliced peaches on top equally among them.
  • Brush the edges of the pastries again with the milk and apple cider vinegar mixture again.
  • Brush the top of the peaches with the peach jam. Season with a pinch of salt and pepper on top.
  • Place into the oven to bake for about 25 minutes or until golden brown on the edges.
  • Serve warm with some more thyme and sprinkled with agave or maple syrup. Enjoy!
Notes

If you cannot find vegan brie cheese premade, use a similarly subtle-tasting cheese. Last resort - cream cheese would work!

Vegan Peach Tarts with Brie Cheese and Thyme

Beautiful and delicious tarts that are both sweet and savory. Peaches are combined with cheese and thyme and then baked with puff pastry for a sweet, goey, yet savory, treat.

These taste great with coffee for a breakfast, terrific with a salad as a lunch, or wonderful after a meal for dinner. This is a terrific recipe to feed a lot of people as well since it is easy to make and creates enough servings for 6 people with little cleanup!

Best of all these peach tarts are surprisingly low in calorie considering we're using cheese and puff pastry as well! The recipe truly highlights the combination of sweet and savory by focusing on the peaches, salt, pepper, and thyme, versus needing a lot of extra ingredients.
