Yield: Palmini Rice Salad Bowl (2 Servings)
Needed Kitchenware: Airfryer, steamer, saucepan
  • 1 pack Palmini Rice
  • 1 cup red bell pepper, cubed
  • 1 cup carrot, peeled and cubed
  • 1 cup corn kernels
  • 1 cup edamame, unshelled, and steamed
  • 6 oz firm tofu
  • 1 tbsp olive oil
  • ¼ cup cilantro, torn
  • 1 cup purple cauliflower, chopped
Sticky Asian Sauce
  • 3 tbsp coconut sugar
  • 3 tbsp reduced sodium soy sauce
  • ½ garlic clove, crushed
  • splash of chili sauce

  • Prepare all the fruit and vegetables and set aside. If you have not steamed your edamame yet, do so now.
  • Press the tofu to release its water content. Cube the tofu. Drizzle with the olive oil and air fry at 400°F or 200°C until crispy. If you do not have an air fryer, you can do this in the oven but it will take longer.
  • Combine all sauce ingredients into a saucepan and simmer at a low temperature until sugar dissolves and becomes thicker. Remove from heat and set aside.
  • Place your rice in the center of a large bowl or plate. Arrange veggies and tofu. Drizzle with a some of that delicious sauce.
