This is a quick and easy no-bake, gluten-free cookie recipe with no added sugar. Packed with healthy fats and fibers and with much less sugar than usual. It's a great alternative for those who don't want to indulge in too much sugar or just want to have a healthy snack.

Yield: ~22 Cookies (22 Servings)
Needed Kitchenware: Large food processor, sauce pan, bowl, cookie cutter in a simple shape
  • 200 g (1½ cups) mixed nuts
  • 150 g (⅔ cup) dried dates, pitted
  • 100 g (½ cup) dried figs
  • 50 g (⅓ cup) apricots
  • 2-3 tbsp cocoa powder
  • 1 pinch of salt
  • 1 tbsp gingerbread spice
  • 2 tbsp coconut oil
  • 80 g (½ cup) dark chocolate
Recipe Directions


  • Put all the ingredients, except the chocolate, into a food processor and pulse until they are fully combined and form a sticky mass.
  • Take about a tablespoon of the dough and press evenly into a cookie cutter (I recommend using simple cutters).
  • Hold the dough down with one finger to remove the cookie cutter.
  • Chop the chocolate into small pieces and melt it in a bowl over hot water in a saucepan.
  • Drizzle the melted chocolate over the cookies with a fork to create a grid shape.
