Yield: 6-8 Personal Calzones (7 Servings)
Needed Kitchenware: Stand mixer, large mixing bowl, kitchen towel, frying pan, rolling pin, pizza stone, oven
Dough
  • 450 g '00 flour
  • 1 tsp sugar
  • 7 g instant dry yeast
  • 2 tsp salt
  • 1½ cup warm water
  • 2 tbsp olive oil
Filling
  • 2 tbsp extra virgin olive oil
  • 1 tbsp salted vegan butter (I used Le Grand)
  • 250 g button mushrooms, halved
  • 1 block extra firm tofu, grated
  • 1 tbsp nutritional yeast
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 3 tbsp tamari
  • salt and pepper, to taste
  • 12 tbsp (¾ cup) per calzone marinara sauce
  • 12 tbsp (¾ cup) per calzone vegan mozzarella shreds
Recipe Directions

Directions

  • Combine dry ingredients for the dough in a stand mixer. Add the water and oil and mix until a dough ball forms.
  • Knead dough until smooth adding flour as needed 1 tablespoon at a time.
  • Place dough in a bowl. Cover and allow to rise in a warm area for roughly an hour.
  • Once dough has doubled in size, divide into 6-8 equal pieces. Cover with a kitchen towel until you're ready to roll out and add filling.
  • In a frying pan over medium-high heat, add olive oil until heated through. Add tofu and cook until golden on both sides. Add nutritional yeast, paprika, garlic powder, onion powder, and tamari. Stir to coat everything and cook until tofu is chewy with some crispy bits.
  • Remove the tofu from pan and set aside. To the pan, add vegan butter and mushrooms. Cook until golden. Season with salt and pepper.
  • Preheat oven to 450°F or 230°C.
  • Roll dough into circles, add sauce, sausage, and cheese on half of the circle, leaving room around the perimeter.
  • Fold dough over itself. Press, fold, and twist edges.
  • Brush with olive oil and cook on a pizza stone in oven until golden, 20-25 or so minutes.
  • Remove calzones from oven and allow to cool slightly before digging in. Enjoy!
Notes

'00 flour is a specific type of flour. If you cannot find '00 flour, you can substitute for bread flour or all-purpose flour. The substitution will be noticeable to the texture and taste of the pasta so '00 is recommended to use.
