Yield: Savory Pie (4 Servings)
Needed Kitchenware: Frying pan, cooking pot, mixing bowl, refrigerator, plastic wrap, large baking dish, oven
Filling
  • 2 tbsp vegan butter
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 250 g cremini mushrooms, sliced
  • salt, to taste
  • 2 medium yellow potatoes, cubed
  • 1 19 oz can lentils
  • 1 tsp dijon mustard
  • 1½ tsp thyme
  • ¼ tsp ground black pepper
  • 1½ tsp corn starch
  • ½ 13.5 oz can full fat coconut milk
  • ¼ cup tamari sauce
  • 125 ml (~½ cup) vegetable stock or water
Crust
  • 190 g all-purpose flour
  • ½ tsp salt
  • ⅛ tsp baking powder
  • 85 g vegan butter
  • 36 g vegetable shortening
  • 2 tsbp water, chilled
  • 2 tbsp melted vegan butter
  • ½ tsp tamari sauce

Directions

  • In a frying pan over medium heat, melt the 2 tablespoons of vegan butter. Cook onion and garlic until onions soften. Add mushrooms and season with salt, to taste. Cook until moisture evaporates.
  • Boil your cubed potatoes until almost done, about 10 minutes. When done, add potatoes and lentils to frying pan and stir.
  • Whisk together remaining filling ingredients in a bowl and pour into pan. Cook until sauce thickens. Adjust seasoning, remove from heat and allow to cool.
  • To make the crust, combine the all-purpose flour, salt, baking powder, vegan butter, and vegetable shortening together with pastry cutter until coarse crumbs form. Add water and stir. Gather crumbly dough and fold it over itself using your hands. Press it out again and repeat a few more times until dough holds together.
  • Form into a disk, wrap in plastic wrap, and chill for at least 45 minutes.
  • Roll into desired shape to cover the top of your pie. Dust with flour as needed.
  • Fill your favorite baking dish with the filling and cover with your pastry dough. Mix together the 2 tablespoons of melted butter with the ½ teaspoon tamari sauce and brush the top of the dought with this mixture. Score pastry, if desired. Chill for at least 30 minutes.
  • Bake at preheated 375°F or 190°C for 50 minutes or until crust is cooked and golden.
  • Allow to cool slightly before enjoying. Bon appetit!
