I use my favourite protein powder, along with smooth runny peanut butter and dark chocolate to make this. The entire cookie from start to finish took me less than 5 minutes!

Yield: 1 Cookie (1 Servings)
Needed Kitchenware: Mixing bowl, microwave-safe plate, microwave
  • ½ large ripe banana or 1 small banana
  • 1½ tbsp runny peanut butter
  • ~40 g vegan vanilla protein powder (I used Macro Mike)
  • 20 g dark chocolate, chopped into chunks

  • In a small bowl, mash the ripe banana well.
  • Add in the peanut butter and mix until combined.
  • Add in the protein powder and mix until a moldable, non-sticky cookie dough consistency happens. You might need to add a bit more or less protein powder depending on what brand you use and how big your banana is.
  • Form the cookie dough into a cookie shape on a microwave safe plate.
  • Decorate with chocolate chunks.
  • Microwave on high for 90 seconds.
  • Allow the cookie to cool for 5 mins before serving.
