Yield: Matcha Chocolate Strawberries (8 Servings)
Needed Kitchenware: Refrigerator, 2 tempering bowls, 8 wooden skewers, 3-4 inch tall container, jar, rubber bands
  • 8 strawberries, chilled 3 hours
  • 60 g cacao butter
  • 75 g tahini
  • 70 g powdered sugar
  • 10 g coconut cream, from full can chilled overnight
  • 8 g culinary matcha powder

  • Wash and remove the stems of the strawberries and refrigerate for at least 3 hours. This makes it easier to coat the strawberry when dipping it into the chocolate.
  • Chill one can of coconut cream overnight. Refrigerating the cream helps solidify the cream. Separate the cream from the liquid to weight out the 10 grams of coconut cream needed.
  • Temper the cacao butter with a hot water boiler around 40-45°C or 104-113°F, see video for more detail.
  • Next, add the solidified coconut cream and mix well.
  • Add tahini, powdered sugar, and matcha powder to the bowl and mix thoroughly until smooth.
  • Gently pierce the top of the strawberry with a wooden skewer.
  • Prepare a container at least 3-4 inches tall and tie two strings or wrap two thick rubber bands around the container.
  • Pour the matcha chocolate into a small dipping jar and dip the pierced strawberry to fully coat. The matcha chocolate will slightly harden at room temperature so you can repeat this process 3 times to add a thick layer of chocolate around each strawberry.
  • Slide the lower end of each skewer under the second string/band then carefully rest the upper end of the skewer below the strawberry and rest on the first string/band to dry. Please see video for more detail.
  • Place the strawberries in the refrigerator for at least 3 hours.
  • Carefully remove the bamboo skewers and enjoy!
