Wonderfully simple and delicious 🍩 donuts dusted with cinnamon and sugar. These whole food donuts are oil-free, gluten-free, refined sugar-free, and are Medical Medium approved!

Yield: 6 Large Donuts or 20 Mini Donuts (6 Servings)
Needed Kitchenware: Mixing bowls, donut baking pan
Donuts
  • ⅓ cup water
  • 1 tsp lemon juice
  • ½ tsp vanilla (non-alcoholic or bean paste)
  • 3 tbsp unsweetened applesauce
  • ⅓ cup maple syrup
  • 1 cup gluten-free flour or oat flour
  • 1 tsp baking powder
  • ½ tsp cinnamon
  • ¼ tsp salt (optional)
Cinnamon Sugar Coating
  • ½ cup coconut sugar
  • 1 tbsp cinnamon
  • ½-1 cup maple syrup
Recipe Directions

Directions

  • Preheat oven to 350°F or 180°C.
  • Whisk together water, lemon juice, vanilla, applesauce, and maple syrup.
  • Add the flour, baking powder, cinnamon, and salt (if using) and mix well.
  • Pour batter into silicone or non-stick donut pans. If you do not use these, you may need to grease your pans to ensure they don't stick.
  • Bake for 8 minutes for large donuts and 4-5 minutes for mini donuts. Donuts should have risen and be cooked through. Check for doneness by using a toothpick, if it goes in and comes out clean, they're done. Let cool completely before removing from the pan.
  • Prepare cinnamon sugar coating by mixing together coconut sugar and cinnamon.
  • Dip the donut into maple syrup and then into the cinnamon sugar coating. Enjoy!
Notes

Alternatively, if you wish to use oil or vegan butter, spray or brush the donuts with oil or vegan butter before dipping in cinnamon sugar coating.
