At home, roasted vegetables with some sauce are a 'must' without a doubt. And with romesco precisely... this dip is full of flavor! This romesco uses almonds, loquat fruit, and a couple of spices - easy and quick to make!

Needed Kitchenware: Mixing bowl, sauce pan, baking sheet, emulsifier food processor or blender, oven
Romesco Dip
  • 4 loquats, skinned and de-seeded
  • 130g almonds
  • 1 garlic clove
  • 1 tsp smoked paprika
  • Pinch of salt
  • 100ml of extra virgin olive oil
(Optional) Roasted Vegetables
  • 1 eggplant
  • 8 brussels sprouts
  • ½ head of garlic, cut in half
  • Handful of mushrooms, sliced
  • Salt
  • Ground black pepper
  • Extra virgin olive oil

  • Let's start by preparing the almonds. Heat about 1 cup of water in a saucepan on the stove until it begins to boil. Turn off the heat and carefully add the almonds to this pot. Move the pot off the burner and allow it to cool down, about 20 minutes. Drain the water and one-by-one, pop the skin off of each almond using your fingers.
  • Preheat oven to 180°C or 350°F.
  • If roasting the vegetables, prepare them all and then use enough olive oil to coat. Place onto a baking sheet into the oven. These are done in about 30 minutes.
  • At the same time, place the almonds onto a baking sheet into the oven. These will be roasted in about 15 minutes, but check 10 minutes-at-a time to make sure not to burn them.
  • When the almonds are done, blend the roasted almonds with the loquats, garlic clove, smoked paprika, salt, and olive oil. I used a hand-emulsifier to blend but you can use a food processor or blender. I like to leave some texture in the dip, so I do not blend until completely smooth.
  • Serve the dip with the vegetables when done and enjoy!
Notes

If loquats are not available, substitute with apricots or plums.
