Yield: 1 Shepherd's Pie (6 Servings)
Needed Kitchenware: Large cooking pan, baking tray, large cooking pot, baking dish, oven
The Meaty Base
  • 3 tbsp salted vegan butter (I used Le Grand)
  • 6 garlic cloves, diced
  • 1 onion, chopped
  • 2 carrots, chopped
  • 1 medium beet, grated
  • ¼ cup vegetable stock
  • 400g mushrooms, diced
  • 19 oz lentils, cooked or from canned
  • 1 cup hydrated textured vegetable protein (or sub, see notes)
  • ¼ cup tamari
  • ¼ cup water
  • ⅛ cup balsamic vinegar
  • 2 tbsp fresh rosemary, chopped
  • salt and pepper, to taste
The Mash
  • 2 rutabagas, peeled and chopped
  • 4 large Yukon Gold poatoes
  • 2-3 heaping tbsp vegan butter
  • 3 handfuls of fresh spinach
  • salt and pepper, to taste
  • vegan parmesan
  • fresh thyme
Recipe Directions


  • Preheat oven to 425°F or 220°C.
  • ⁣⁣Cook garlic, onion, mushrooms, carrots, and beet in the salted butter. Add the veggie stock and cook until moisture has been absorbed and veggies are nearly done.
  • ⁣⁣Add remaining meaty base ingredients and stir. Leave over low heat as you prepare mash.
  • ⁣Pierce potatoes with a fork and roast on a baking tray in the oven for roughly 45-50 minutes (will depend on size of potato).⁣
  • ⁣In a large pot with boiling, salted water, boil chopped rutabaga until tender. About 30 minutes. (⁣I roasted the potatoes because the rutabaga mash has more moisture and it made for a fluffier mix! You can boil both, if you want.)
  • ⁣Drain rutabaga and scoop potato from the skin when done. ⁣Mash together, add the vegan butter, a healthy pinch of salt and pepper, and chopped spinach. Stir until combined.⁣
  • Change oven to 400°F or 200°C.
  • ⁣In a baking dish, add the meaty lentil base. Top with mash and sprinkle with vegan parmesan. ⁣Bake for 30-35 minutes.⁣
  • ⁣Allow to cool slightly. Sprinkle with thyme and enjoy!⁣

To substitute the textured vegetable protein, use 1 cup of your choice of nuts and pulse them in a food processor or blender into a coarse crumb.
