Needed Kitchenware: Mixing bowl, sifter, piping bag, baking donut mold tray, blender, saucepan
Lemon Donuts
  • 1 cup chickpea flour
  • ½ cup brown rice flour
  • 2 tbsp tapioca starch
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ¼ tsp salt
  • ⅓ cup maple syrup
  • ½ cup unsweetened apple sauce
  • 3 tbsp meyer lemon juice
  • 1 tsp lemon juice
  • 1½ tsp vanilla
  • 1 cup cashews
  • 6 tbsp maple syrup
  • Pinch of sea salt
  • 6 tbsp lemon juice
Blackberry Chia Jam
  • ½ cup fresh blackberries
  • ¼ cup water
  • 2 tbsp maple syrup
  • 1 tbsp chia seeds
Recipe Directions


  • Preheat your oven to 350°F or 175°C.
  • Add the cashews to a bowl with warm water and soak for 15 minutes while you prepare the batter.
  • In a large bowl, whisk together maple syrup, apple sauce, meyer lemon juice, lemon juice, and vanilla until smooth.
  • Sift in chickpea flour, brown rice flour, tapioca starch, baking powder, baking soda, and salt. Use a spatula to combine the mixture until smooth.
  • Transfer the mixture into a piping bag and pipe into the donut mold.
  • Bake in the oven for 15-17 minutes until they are cooked through and a toothpick comes out clean. When the donuts are done, remove them from the pan and let them cool completely.
  • Prepare the icing by discarding the liquid the cashews were soaking in. Place the soaked cashews, maple syrup, salt, and lemon juice in a high speed blend and blend until smooth.
  • Prep the blackberry jam by adding all the Blackberry Chia Jam ingredients to a small saucepan. Bring to a boil and then reduce to a simmer for 15 minutes. Use a spatula or back of a spoon to smush the blackberries down into a jam. Add chia seeds, stir, and remove from heat to allow it to thicken into a jam.
  • When donuts are completely cooled, dip each donut into the icing, and spoon chia jam into the center. Enjoy!

Use an alcohol-free vanilla flavoring or powdered vanilla.
