Needed Kitchenware: Baking tray, cooking pot, hand-held immersion blender or blender, cocktail stick or chopstick, parchment paper, oven
Soup
  • 6 red bell peppers
  • 2 tbsp olive oil
  • 25 g vegan butter
  • 2 leeks, sliced
  • 3 garlic cloves, crushed
  • 800 g chopped tomatoes
  • 1 tsp sugar
  • 4¼ cup vegetable stock
  • 2 bay leaves
  • ¼ tsp salt
  • freshly ground black pepper, to taste
  • 10 tsp soy skyr or other thick vegan yogurt/cream, unsweetened, plain

  • 6 slices bread
  • 3 tbsp tomato purée
  • 3 pitted black olives, sliced
  • 6 vegan chedder slices, sliced into thin strips
Spider Garnish
  • 9 pitted black olives

Directions

Soup
  • Preheat the oven to 400°F or 200°C.
  • Place the bell peppers on a baking tray, cover them with the olive oil using your hands. Roast for about 40 minutes, until collapsed and blackened in places. Allow to cool when done.
  • Allow to cool, then tear out and discard the stalks and seeds. Remove what you can of the skins, it's okay if some remain. Set the roasted peppers aside.
  • Melt the butter in a cooking pot over medium heat. Add the leek and garlic.
  • Cook, stirring over a medium heat for 10 minutes until the leeks have softened. Then add the tomatoes, sugar, peppers, stock, and bay leaves. Bring to a simmer for 15 minutes.
  • Season the mixture with salt and pepper, remove the bay leaves, then blend the soup until smooth using either a blender or a hand-held immersion blender.
  • Pour the soup into bowls, then draw concentric circles with the yogurt or cream in each bowl as the basis for the spider webs.
  • Use a cocktail stick or chopstick to feather them out for a spider's web effect.
Spider Garnish
  • Refer to the image for help. Cut 3 olives into halves and place each half face down somewhere near the edge of the soup bowl on top of the finished soups, but not all the way at the edge. This olive is the spider's body. Cut the other olives long-wise into 8 sections each and use these as the spider legs.
Toasties
  • Preheat the grill to high and line a large baking tray with parchment paper. Alternatively, you can use your oven's broiler option as well.
  • Lightly toast the bread, then spread each evenly with the tomato purée.
  • Put 2 olive rings on each slice, near the top for eyes, and then lay out the cheese strips diagonally over the toast, spaced out so they don't melt into each other, mimicking a mummy effect.
  • Grill or toast under the broiler for about 1 minute, until the cheese has just melted. Don't over do it, too long and you'll lose the bandage effect and burn the bread.
