Yield: 4 Squash Quesadillas (4 Servings)
Needed Kitchenware: Baking tray, parchment paper, large mixing bowl, oven
  • 400 g butternut squash, peeled and cut into cubes
  • 8 flour tortillas
  • ~200 g canned corn, drained
  • 4 spring onions, finely sliced
  • Zest of 1 lime
  • 80 g shredded vegan cheese, preferably Mexican mix
  • 1 tsp oil

  • Preheat oven to 220°C or 430°F.
  • Place the cubed squash on a parchment-lined baking tray and roast for 25-30 minutes, until tender.
  • Meanwhile, stack two tortillas on top of each other and cut out a pumpkin stem shape at the top, discarding the scrap. Keep these two tortillas paired together, set aside, and repeat with the remaining tortillas.
  • Then take one pair and cut a jack-o’-lantern face out of one tortilla, leaving the other uncut. Repeat with the other pairs.
  • Once the squash is done, set aside to cool for a few minutes. Leave the oven on.
  • Put the squash into a large bowl and mash. Add in the corn, spring onions, and lime zest. Add salt and pepper if you'd like. Mix well.
  • Arrange the 4 tortillas without faces on a large baking tray.
  • Sprinkle each with the cheese divided amongst them, then top with the squash mixture.
  • Add the matching jack-o’-lantern faces on top. Brush each with oil and bake for 10 minutes, until golden.
