Yield: Jack O'Lantern Rice Cakes (6 Servings)
Needed Kitchenware: none
  • ½ cup roasted red pepper hummus
  • 6 rice cakes, unsalted
  • 6 small celery stalk pieces
  • 6 small celery leaves
  • 10 black olives, pitted
  • (optional) Sprigs of mint

Directions

  • Spread the hummus on each of the rice cakes. Use a wooden skewer or chopstick to mark curved lines through the hummus to resemble a pumpkin.
  • Position the celery sticks and leaves at the top of the rice cakes to resemble a stalk.
  • Cut the olives into small triangles. Each these pieces for the eyes, nose, and mouth on each rice cake.
  • Place all on a serving platter and decorate with the mint sprigs to resemble pumpkin vines. Enjoy!
